Ingredients
  

  • 2 cups Old fashioned oats Not instant oats
  • 1.5 cups Milk Any variety
  • 3 medium Apples Granny Smith or Honeycrisp
  • 2 large Eggs Room temperature
  • cup Brown sugar Packed, divided
  • 1 teaspoon Baking powder For fluffy texture
  • 2 teaspoon Ground cinnamon Divided
  • 1 teaspoon Vanilla extract Pure preferred
  • ¼ teaspoon Salt For flavor balance
  • 3 tablespoon Butter Melted, divided
  • ¼ cup Chopped walnuts or pecans For topping
  • 2 tablespoon Maple syrup Optional for serving

Method
 

  1. Preheat oven to 375°F, grease 9x9 baking dish thoroughly
  2. Peel and slice apples thin, toss with 1 tablespoon brown sugar and half teaspoon cinnamon
  3. Arrange seasoned apple slices evenly in bottom of prepared baking dish
  4. Whisk eggs, milk, 2 tablespoons melted butter, remaining brown sugar, vanilla, cinnamon, baking powder and salt
  5. Stir in oats until coated, let sit 5 minutes to absorb liquid
  6. Spread oat mixture evenly over apple layer in dish
  7. Mix remaining oats, chopped nuts, cinnamon and remaining melted butter
  8. Sprinkle topping mixture over oatmeal layer
  9. Bake 35 to 40 minutes until golden brown and center is set
  10. Let cool 10 minutes, cut into squares, serve with maple syrup if desired
