Baked Potatoes with Mushrooms

Ingredients
  

  • 4 large Yukon Gold or Russet potatoes Scrubbed and pierced
  • 1 lb Cremini mushrooms Thickly sliced
  • 3 cups Fresh spinach Packed
  • ½ cup Yellow onion Diced
  • 3 cloves Garlic Minced
  • 1 cup Vegetable broth Low sodium
  • 1 tablespoon Soy sauce For umami depth
  • 1 tablespoon Cornstarch Mixed with 1 tablespoon cold water
  • 1 tablespoon Olive oil For sautéing
  • 1 teaspoon Sesame seeds For garnish
  • 1 tablespoon Fresh parsley Chopped, for garnish

Equipment

  • 1 Baking sheet For roasting potatoes
  • 1 Large skillet For the filling and gravy
  • 1 Whisk For the cornstarch slurry

Method
 

  1. Rub potatoes with a little oil and salt, pierce with a fork, and bake at 400°F for 45-60 minutes until completely tender.
  2. Heat oil in a skillet, sauté diced onions until soft, then add sliced mushrooms and cook until deeply browned.
  3. Add minced garlic for 30 seconds, then toss in the fresh spinach and cook just until wilted. Remove mixture from the pan.
  4. In the same skillet, pour in vegetable broth and soy sauce. Whisk in the cornstarch slurry and simmer for 2 minutes until it forms a thick gravy.
  5. Slice the baked potatoes open, stuff generously with the mushroom and spinach mixture, and drizzle with the warm pan gravy.
  6. Garnish with sesame seeds and fresh parsley before serving hot.

Notes

Do not salt the mushrooms until they have achieved a beautiful brown sear in the skillet; salting them too early will draw out their moisture and cause them to steam.
