Blueberry Thyme Chicken

Method
 

  1. Pat chicken pieces completely dry with paper towels so the skin browns during roasting rather than steaming from surface moisture.
  2. Whisk olive oil, honey, balsamic vinegar, minced garlic, thyme leaves, smoked paprika, salt, and black pepper together in a large bowl until fully combined into a glossy marinade.
  3. Add chicken pieces to the marinade and toss until every surface is evenly coated, pressing the marinade into any crevices around the bone for full coverage.
  4. Cover and refrigerate for at least 30 minutes or up to 8 hours, then bring to room temperature for 20 minutes before roasting so the chicken cooks evenly from edge to center.
  5. Preheat oven to 220°C and arrange marinated chicken pieces skin-side up on a large rimmed sheet pan with enough space between each piece for air to circulate freely.
  6. Scatter fresh blueberries generously around and between all the chicken pieces and tuck several whole thyme sprigs between them as shown in the image.
  7. Roast on the middle rack at 220°C for 35 minutes without opening the oven door so the heat stays consistent and the skin begins to caramelize deeply.
  8. At the 35-minute mark, spoon burst blueberry pan juices back over each chicken piece using a large spoon so the glaze builds up on the skin surface.
  9. Return to the oven for 10 to 15 more minutes until the skin is fully caramelized and lacquered and the internal temperature of the thickest piece reads 74°C.
  10. Rest the chicken on the pan for 5 minutes, then spoon pan juices over each piece one final time and tuck fresh thyme sprigs across the pan before serving directly from the sheet pan at the table.

Notes

Pat chicken completely dry before marinating so the skin caramelizes rather than steams. Use a large enough pan so pieces are not crowded. Baste with pan juices at the 35-minute mark for the lacquered glaze visible in the image. Always rest 5 minutes before serving.
