Method
- Pat chicken pieces completely dry with paper towels so the skin browns during roasting rather than steaming from surface moisture.
- Whisk olive oil, honey, balsamic vinegar, minced garlic, thyme leaves, smoked paprika, salt, and black pepper together in a large bowl until fully combined into a glossy marinade.
- Add chicken pieces to the marinade and toss until every surface is evenly coated, pressing the marinade into any crevices around the bone for full coverage.
- Cover and refrigerate for at least 30 minutes or up to 8 hours, then bring to room temperature for 20 minutes before roasting so the chicken cooks evenly from edge to center.
- Preheat oven to 220°C and arrange marinated chicken pieces skin-side up on a large rimmed sheet pan with enough space between each piece for air to circulate freely.
- Scatter fresh blueberries generously around and between all the chicken pieces and tuck several whole thyme sprigs between them as shown in the image.
- Roast on the middle rack at 220°C for 35 minutes without opening the oven door so the heat stays consistent and the skin begins to caramelize deeply.
- At the 35-minute mark, spoon burst blueberry pan juices back over each chicken piece using a large spoon so the glaze builds up on the skin surface.
- Return to the oven for 10 to 15 more minutes until the skin is fully caramelized and lacquered and the internal temperature of the thickest piece reads 74°C.
- Rest the chicken on the pan for 5 minutes, then spoon pan juices over each piece one final time and tuck fresh thyme sprigs across the pan before serving directly from the sheet pan at the table.
