Method

  2. Beat 2 eggs, milk, melted butter, and vanilla in separate bowl
  3. Pour wet ingredients into dry, stirring just until combined
  4. Cook bacon strips until crispy, drain on paper towels
  5. Heat griddle over medium heat, lightly grease with butter
  6. Pour ¼ cup batter per pancake, cook until bubbles form
  7. Flip pancakes when edges look set, cook until golden
  8. Keep cooked pancakes warm in 200°F oven
  9. Beat remaining 4 eggs with salt, scramble in bacon fat
  10. Break cooled bacon into bite sized pieces
  11. Place 2 tablespoon scrambled eggs down center of each pancake
  12. Add bacon pieces and cheese to each pancake
  13. Fold pancakes in half like taco shells
  14. Top with chives, serve with syrup and sour cream
