Ingredients
  

  • 1 ½ cups all purpose flour Spoon and level to measure
  • 2 teaspoon baking powder Ensures a fluffy lift
  • 1 tablespoon ground cinnamon Divided for batter and coating
  • 1 cup whole milk Room temperature
  • 2 large eggs Lightly beaten
  • ¼ cup unsalted butter Melted, plus extra for brushing
  • 1 teaspoon vanilla extract Adds wonderful warmth
  • ½ cup granulated sugar For the crisp exterior coating

Method
 

  1. Whisk the flour, baking powder, salt, and a dash of cinnamon together in a large mixing bowl.
  2. Combine the milk, eggs, vanilla extract, and melted butter in a separate smaller jug.
  3. Pour the wet ingredients into the dry mixture, stirring gently until just combined with a few lumps remaining.
  4. Blend the granulated sugar and remaining ground cinnamon on a wide shallow plate for the final coating.
  5. Heat a large nonstick griddle over medium heat and melt a small pat of butter on the surface.
  6. Pour circles of batter onto the hot griddle, cooking until bubbles appear and pop on the surface.
  7. Flip the cakes carefully and cook the other side until deeply golden brown and fully set inside.
  8. Brush the slightly cooled cakes with butter, then toss them in the cinnamon sugar mixture to coat completely.

Notes

Let the cooked pancakes rest for thirty seconds before dipping them. This prevents the steam from melting your sweet cinnamon sugar coating.
