Ingredients

  • 2 cups all-purpose flour Sifted for lightness
  • 1 cup whole milk Room temperature
  • 1 large egg Beaten lightly
  • ½ cup brown sugar Packed for the swirl
  • 1 tablespoon ground cinnamon For spiced flavor
  • 4 oz cream cheese Softened for glaze
  • 2 tablespoon melted butter For the batter

Equipment

  • 1 Non-stick Griddle For even cooking
  • 1 Piping bag To create the spiral
  • 1 Whisk For the glaze

Method

  1. Whisk the flour, milk, egg, and melted butter in a large bowl until the batter is mostly smooth.
  2. Combine brown sugar and cinnamon with softened butter in a piping bag to create the swirl mixture.
  3. Pour batter onto a low-heat griddle and pipe a spiral of cinnamon mixture onto the surface immediately.
  4. Flip the pancake once bubbles form and cook the other side briefly until the sugar is caramelized.

Notes

Keep the griddle heat low to prevent the sugar swirl from burning before the pancake is cooked through. If the glaze is too thick to drizzle, add a teaspoon of milk until it reaches a pourable consistency.
