Ingredients
  

  • 4 oz strong espresso cooled to room temperature
  • 3 oz vodka premium quality preferred
  • 2 oz coffee liqueur Kahlúa or similar
  • 2 oz heavy cream creates foam layer
  • 2 tablespoon pumpkin puree pure pumpkin, not pie filling
  • ¼ cup brown sugar for spiced syrup
  • ¼ cup water for syrup base
  • 1 teaspoon ground cinnamon plus extra for dusting
  • ¼ teaspoon ground nutmeg fresh grated preferred
  • ¼ teaspoon ground ginger for spicy warmth
  • teaspoon ground cloves use sparingly
  • ½ teaspoon vanilla extract pure vanilla only
  • 6 whole coffee beans for garnish
  • 2 cups ice cubes for shaking

Equipment

  • Cocktail shaker with strainer
  • Jigger or measuring tools
  • Small saucepan
  • Fine mesh strainer
  • Coupe or martini glasses
  • Bar spoon
  • Espresso machine

Method
 

  1. Combine brown sugar, water, pumpkin, and spices in saucepan
  2. Simmer 5-7 minutes until thickened, stirring constantly
  3. Add vanilla, strain through fine mesh, cool completely
  4. Make strong espresso, let cool to room temperature
  5. Place coupe glasses in freezer for 5 minutes
  6. Add ice to cocktail shaker until half full
  7. Add espresso, vodka, coffee liqueur, syrup, and cream
  8. Shake vigorously 15-20 seconds until frothy and cold
  9. Pour through strainer into chilled glasses
  10. Dust with cinnamon, add 3 coffee beans to each glass
  11. Serve immediately while foam is at peak
