Creamy Zucchini Noodle Chicken Alfredo

Ingredients
  

  • 4 medium zucchini, spiralized into noodles Salted, rested 15 to 20 minutes, then thoroughly pressed dry before cooking
  • 2 boneless skinless chicken breasts Seared with the paprika seasoning crust visible in the image
  • 1 teaspoon smoked paprika The reddish-brown crust visible on the chicken surface in the image
  • 1 teaspoon garlic powder Blended with the paprika for the chicken seasoning
  • salt and black pepper to taste Used on the chicken and in the sauce at every stage
  • 2 tablespoon olive oil For searing the chicken in a very hot pan to develop the crust
  • 3 garlic cloves, minced The aromatic backbone of the Alfredo sauce
  • 1 tablespoon unsalted butter Starts the sauce and gives it richness alongside the chicken drippings
  • 1 cup heavy cream The base of the Alfredo sauce that coats every strand of zucchini noodle
  • 0.75 cup freshly grated Parmesan cheese Added gradually while stirring so it melts smoothly without clumping

Equipment

  • 1 Wide heavy skillet (28cm minimum) For searing chicken at high heat and building the Alfredo sauce in the same pan
  • 1 Instant read thermometer For checking chicken reaches 74°C internal temperature before resting
  • 1 Sharp knife and cutting board For slicing the rested chicken on the diagonal for the fanned presentation

Method
 

  1. Spiralize zucchini into long noodles, place in a colander, sprinkle generously with salt, toss to coat, and allow to sit for 15 to 20 minutes so excess moisture is drawn out.
  2. Press the salted zucchini noodles thoroughly dry with paper towels, working in batches and pressing firmly, then set aside while the chicken is prepared.
  3. Combine smoked paprika, garlic powder, salt, and black pepper in a small bowl and rub evenly over both sides of each chicken breast pressing the seasoning firmly into the surface.
  4. Heat olive oil in a wide heavy skillet over high heat until shimmering, add chicken breasts and press down so the full surface contacts the pan, then sear for 4 to 5 minutes per side until deeply browned and cooked to 74°C internal temperature.
  5. Remove chicken to a cutting board and rest for 5 minutes, then slice on the diagonal into even pieces for the fanned presentation across the top of the bowl as shown in the image.
  6. Reduce heat to medium, add butter to the same pan with the chicken drippings, let it melt fully, then add minced garlic and stir for 60 seconds until fragrant but not browned.
  7. Pour heavy cream into the pan, stir to combine with the garlic butter, and simmer on medium-low for 3 to 4 minutes until the cream thickens slightly and coats the back of a spoon.
  8. Add grated Parmesan gradually while stirring constantly until the sauce is smooth and glossy, then season with chili flakes, salt, and black pepper and taste before the noodles go in.
  9. Add the thoroughly dried zucchini noodles to the sauce and toss quickly for no more than 60 seconds over medium heat until every strand is coated and glossy, then remove from heat immediately.
  10. Pile the sauced noodles into wide shallow grey-blue bowls, fan the sliced chicken across the top with the crust facing upward, scatter fresh parsley and a pinch of chili flakes over everything, and serve immediately.

Notes

Salt and thoroughly press the zucchini noodles before cooking or the sauce will thin immediately. Never cook the noodles in the sauce for more than 60 seconds. Rest the chicken for 5 minutes before slicing so the juices stay inside each piece. Serve immediately after assembling as the zucchini continues to release moisture as it sits.
