Ingredients
  

  • 1 cup red dragon fruit Cubed and puréed smoothly
  • 10 fresh mint leaves Keep whole for muddling
  • 1 large lime Juiced fully
  • 1 tablespoon cane sugar Adjust sweetness to taste
  • 1 cup club soda Chilled and bubbly

Equipment

  • 1 Wooden Muddler To press the mint leaves
  • 1 Kitchen Blender To liquefy the fruit chunks
  • 1 Fine mesh strainer To remove heavy seed pulp

Method
 

  1. Muddle the fresh mint leaves, cane sugar, and lime juice gently in a glass to release aromatic oils.
  2. Purée the cubed red dragon fruit chunks in a blender until the texture is completely smooth.
  3. Strain the pink juice into the glass over a mound of clean crushed ice to chill instantly.
  4. Top with crisp club soda and stir gently before garnishing with a fresh lime wheel.

Notes

Muddle the mint gently to avoid releasing bitter compounds from the leaves. Use red-fleshed dragon fruit to achieve the signature brilliant pink color shown in the photo.
