Ingredients
  

  • 3 lbs Chuck roast Well marbled for tenderness
  • 3 cups Beef broth Low sodium preferred
  • 1 packet Onion soup mix 1 ounce dry packet
  • 1 large Yellow onion Sliced thick
  • 3 tablespoon Worcestershire sauce For umami depth
  • 6 cloves Garlic Whole, peeled
  • 2 Bay leaves Remove before serving
  • 1 teaspoon Black pepper Freshly cracked
  • 8 Hoagie rolls Quality bakery rolls
  • 8 slices Provolone cheese For melting over beef
  • 0.25 cup Fresh parsley Chopped for garnish

Method
 

  1. Place sliced onions in bottom of slow cooker as flavor bed
  2. Season chuck roast generously with black pepper on all sides
  3. Put seasoned roast on top of onions in slow cooker
  4. Add whole garlic cloves and bay leaves around roast
  5. Whisk together beef broth, onion soup mix, and Worcestershire sauce
  6. Pour broth mixture over and around roast in slow cooker
  7. Cover and cook on low 8 to 10 hours or high 4 to 5 hours
  8. Remove beef and shred with two forks, discard large fat pieces
  9. Strain cooking liquid through fine mesh strainer for au jus
  10. Toast hoagie rolls until golden brown
  11. Layer provolone on rolls, pile high with shredded beef
  12. Garnish with parsley and serve with warm au jus for dipping
