Ingredients
  

  • 2 cups Greek yogurt Plain, full fat preferred
  • ½ cup Peanut butter Creamy, divided
  • 3 tablespoon Honey Natural sweetener
  • 1 teaspoon Vanilla extract Pure preferred
  • ½ cup Mini chocolate chips Divided
  • 1 pinch Flaky sea salt Optional garnish

  • Baking sheet For freezing individual bites
  • Parchment paper Prevents sticking to sheet
  • Medium mixing bowl For combining yogurt mixture
  • Cookie scoop Creates uniform sized bites
  • Small microwave safe bowl For melting drizzle peanut butter

Method
 

  1. Combine Greek yogurt, half the peanut butter, honey and vanilla in bowl until smooth
  2. Fold in half the mini chocolate chips distributing evenly
  3. Line baking sheet with parchment paper for easy removal
  4. Use cookie scoop to drop rounded dollops onto prepared sheet
  5. Press remaining chocolate chips into top of each bite
  6. Microwave remaining peanut butter 15 to 20 seconds until pourable
  7. Use fork to drizzle melted peanut butter over each bite
  8. Sprinkle tiny pinch flaky sea salt on each if desired
  9. Freeze minimum 2 hours until completely firm
  10. Transfer to airtight container, keep frozen, soften 2 to 3 minutes before eating
