Method
- Place tall clear glasses in the freezer for 10 minutes before building the drinks so the cream float holds longer and the soda stays cold.
- Combine heavy whipping cream, powdered sugar, and vanilla extract in a chilled bowl and whip to soft peaks so the cream holds a billowy shape without being stiff.
- Refrigerate the whipped cream until the glasses are fully built and ready for the cream pour so it stays cold and firm.
- Press halved strawberries flat cut-side out against the inside walls of each chilled glass so the red face shows clearly through the glass from the outside.
- Add large ice cubes carefully so they do not dislodge the strawberry slices, filling the glass about two thirds full with ice at multiple levels.
- Stir peach juice and strawberry syrup together in a small pitcher until combined, then pour the mixture slowly over the ice down the side of the glass.
- Add chilled sparkling water gently down the side of the glass to preserve carbonation so the base stays bubbly and the golden-amber color fills the glass.
- Hold a large spoon curved-side up just above the soda surface and pour the whipped cream slowly over the back of the spoon so it settles on top without sinking.
- Build the cream layer until it sits thick and billowy above the rim, then arrange whole strawberries, blackberries, and melon chunks on top of the cream as shown in the image.
- Tuck a black straw into the fruit topping at a slight angle and serve immediately while the layers are still distinct and the cream is still cold and firm.
Notes
Always pour the cream over the back of a spoon to keep it floating on top. Chill the glass in the freezer for 10 minutes before building for the best results. Serve immediately after assembling so the layers stay distinct.
