Fruit Irish Cream Soda

A layered sparkling drink built with a golden peach-strawberry soda base, fresh fruit pressed against the glass, large ice cubes, a soft whipped cream float, and a fresh berry and melon crown on top. Ready in under 10 minutes.

Ingredients
  

  • 1 cup sparkling water or club soda, chilled Pour down the side of the glass to preserve carbonation
  • 0.25 cup peach or apricot juice, chilled Creates the warm golden-amber base color
  • 2 tablespoon strawberry syrup or fresh strawberry puree The red swirl visible bleeding through the ice
  • 6 fresh strawberries, halved Pressed flat cut-side out against the inside of the glass before adding ice
  • large ice cubes Fill glass two thirds full; large cubes keep layers distinct longer
  • 0.5 cup heavy whipping cream Whipped to soft peaks for the billowing float on top
  • 1 tablespoon powdered sugar Sweetens the cream lightly without making it too heavy
  • 0.5 teaspoon vanilla extract Added to the cream for gentle depth of flavor
  • 2 whole fresh strawberries For the fruit crown on top of the cream
  • 4 fresh blackberries For the fruit crown; adds color contrast against the cream
  • 4 melon chunks For the fruit crown on top as shown in the image

Equipment

  • 2 Tall clear straight-sided glasses Straight sides show the layers best; chill in freezer 10 minutes before use
  • 1 Chilled mixing bowl For whipping the cream to soft peaks
  • 1 Hand mixer or whisk For whipping the cream
  • 1 Large spoon For floating the cream gently over the soda base
  • 1 Small pitcher or measuring cup For pouring the juice base without disturbing the fruit
  • 1 Sharp knife and cutting board For halving strawberries and cutting melon chunks

Method
 

  1. Place tall clear glasses in the freezer for 10 minutes before building the drinks so the cream float holds longer and the soda stays cold.
  2. Combine heavy whipping cream, powdered sugar, and vanilla extract in a chilled bowl and whip to soft peaks so the cream holds a billowy shape without being stiff.
  3. Refrigerate the whipped cream until the glasses are fully built and ready for the cream pour so it stays cold and firm.
  4. Press halved strawberries flat cut-side out against the inside walls of each chilled glass so the red face shows clearly through the glass from the outside.
  5. Add large ice cubes carefully so they do not dislodge the strawberry slices, filling the glass about two thirds full with ice at multiple levels.
  6. Stir peach juice and strawberry syrup together in a small pitcher until combined, then pour the mixture slowly over the ice down the side of the glass.
  7. Add chilled sparkling water gently down the side of the glass to preserve carbonation so the base stays bubbly and the golden-amber color fills the glass.
  8. Hold a large spoon curved-side up just above the soda surface and pour the whipped cream slowly over the back of the spoon so it settles on top without sinking.
  9. Build the cream layer until it sits thick and billowy above the rim, then arrange whole strawberries, blackberries, and melon chunks on top of the cream as shown in the image.
  10. Tuck a black straw into the fruit topping at a slight angle and serve immediately while the layers are still distinct and the cream is still cold and firm.

Notes

Always pour the cream over the back of a spoon to keep it floating on top. Chill the glass in the freezer for 10 minutes before building for the best results. Serve immediately after assembling so the layers stay distinct.
