Method

  2. Heat 2 tablespoon olive oil in large cast iron skillet over medium high heat
  3. Add halved potatoes cut side down, sear 4 to 5 minutes without moving
  4. Flip potatoes and cook 3 to 4 minutes until crispy and tender, remove to plate
  5. Pat steak cubes completely dry with paper towels for better searing
  6. Add steak cubes to hot skillet, sear 2 to 3 minutes per side until golden
  7. Transfer seared steak to plate temporarily, reduce heat to medium
  8. Add butter to skillet with any remaining drippings, let melt
  9. Add minced garlic and thyme, stir constantly 30 to 60 seconds until fragrant
  10. Return potatoes and steak to skillet, toss in garlic butter
  11. Toss everything until completely coated in aromatic herb butter
  12. Sprinkle with fresh parsley and serve immediately while hot
