For the Meatloaf
  • 2 lbs Ground chicken
  • ¾ cup Breadcrumbs Plain or Italian
  • ¾ cup Parmesan cheese Freshly grated
  • 4 cloves Garlic Minced
  • 2 large Eggs Lightly beaten
  • 2 teaspoon Italian seasoning
  • 1 teaspoon Onion powder
  • ¼ cup Fresh parsley Chopped
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper Freshly ground
For the Topping
  • 1.5 cups Mozzarella cheese Shredded
  • 3 tablespoon Butter Melted
  • 1 teaspoon Garlic powder
  • 2 tablespoon Fresh parsley Chopped for garnish
  • 2 tablespoon Parmesan cheese Extra for topping

Method
 

  1. Preheat to 400°F, line baking sheet with parchment paper
  2. Combine ground chicken, breadcrumbs, parmesan, garlic, eggs, Italian seasoning, onion powder, parsley, salt and pepper in bowl, mix gently until just combined
  3. Let mixture rest 5 minutes for breadcrumbs to absorb moisture
  4. Divide into 6 to 8 equal portions, shape into ovals about 1 inch thick
  5. Place portions on prepared baking sheet 2 inches apart, press gently to flatten slightly
  6. Mix melted butter with garlic powder in small bowl
  7. Brush garlic butter over tops and sides of each portion generously
  8. Top each portion with mozzarella cheese, sprinkle with extra parmesan
  9. Bake 25 to 30 minutes until internal temperature reaches 165°F and cheese is golden and bubbly
  10. Let rest 5 minutes, garnish with fresh parsley, serve hot
