Method
- Clean mushrooms with a damp cloth and leave them whole to help them hold their shape during cooking.
- Heat a wide skillet over medium-high heat for about 2 minutes until the surface feels hot when held a hand above it.
- Add 1 tablespoon of butter to the hot pan and let it melt and foam before adding mushrooms so they sear rather than steam.
- Add mushrooms in a single layer and sear for 3 to 4 minutes without stirring until the undersides turn a deep golden brown.
- Push mushrooms to the side, reduce heat to medium, and add remaining butter to the cleared space until fully melted.
- Add minced garlic to the melted butter and stir for about 60 seconds until fragrant but not browned, then toss mushrooms through to coat.
- Pour in heavy cream, add onion powder, salt, and black pepper, then stir gently and let the sauce simmer on medium-low for 3 to 4 minutes until it visibly thickens.
- Reduce heat to low, stir in grated Parmesan gradually off peak heat, and keep stirring until the sauce turns smooth and glossy and coats the back of a spoon.
- Taste the sauce and adjust seasoning, then let mushrooms rest in the sauce on low heat for 1 to 2 minutes so they absorb the flavor fully.
- Scatter freshly chopped parsley over the top and serve straight from the skillet while the sauce is warm and coating every mushroom evenly.
Notes
Do not crowd the pan when searing or the mushrooms will steam instead of brown. Add Parmesan off peak heat to keep the sauce smooth and glossy. Leftovers keep in the fridge for up to 3 days; stir in a splash of cream when reheating.
