Ingredients
  

  • 3 slices Thick whole grain bread Stale bread works best
  • 1 large Egg Whole
  • cup Egg whites Liquid or separated
  • 1 teaspoon Vanilla extract Divided use
  • 2 teaspoon Cinnamon Ground, divided
  • ¾ cup Greek Yogurt Non-fat plain, for filling
  • 1 tablespoon Maple syrup Or honey, for filling
  • ½ medium Banana Sliced

Equipment

  • 1 Skillet Non-stick
  • 1 Shallow bowl For dipping
  • 1 Whisk For batter
  • 1 Spatula For flipping
  • 1 Small bowl For filling mix

Method
 

  1. Whisk egg, egg whites, half the vanilla, and 1 teaspoon cinnamon in a shallow bowl.
  2. Dip bread slices into the mixture for 5 seconds per side; do not over-soak.
  3. Cook on a greased skillet over medium heat for 3-4 minutes per side until golden.
  4. Mix yogurt, remaining vanilla, and sweetener. Spread between slices and top with banana.

Notes

Don't soak the bread too long or it will get soggy. Use thick slices for the best texture. The yogurt filling provides the creamy 'cheesecake' effect.
