Honey Butter Peach Chicken

Ingredients
  

  • 6 pieces Chicken thighs Boneless or bone-in, patted dry
  • 3 large Fresh peaches Sliced into thick wedges, skin on
  • 3 tablespoon Unsalted butter For the pan sauce
  • ¼ cup Honey Raw or clover
  • 3 cloves Garlic Minced
  • 1 tablespoon Olive oil For searing
  • 1 handful Fresh thyme Sprigs for garnish and flavor
  • 1 tablespoon Apple cider vinegar Optional, to balance sweetness

  • 1 Large cast iron skillet For the best sear and sauce reduction
  • 1 Tongs For easily flipping the chicken

Method
 

  1. Season the chicken thighs with salt and pepper. Heat olive oil in a cast-iron skillet over medium-high heat and sear the chicken until golden brown and cooked through.
  2. Remove the chicken to a plate. Reduce heat to medium-low, add butter to the skillet, and sauté the minced garlic for 30 seconds.
  3. Whisk in the honey and vinegar, scraping up any browned bits from the bottom of the pan to create a glaze.
  4. Return the chicken to the skillet, spooning the honey butter glaze generously over the meat.
  5. Tuck the sliced peaches and fresh thyme sprigs around the chicken. Simmer for 3-5 minutes until the peaches are just warmed through, then serve immediately.

Notes

Add the fresh peach wedges only during the final few minutes of cooking to ensure they soften slightly and release their flavor without turning to mush.
