Ingredients
  

  • 1 lb Italian sausage Bulk or links, mild or hot
  • 1 lb Cheese tortellini Fresh or frozen
  • 4 cups Chicken broth Quality broth preferred
  • 1 cup Heavy cream For creamy texture
  • 1 medium Yellow onion Diced
  • 4 cloves Garlic Minced fresh
  • 1 can (14.5 oz) Diced tomatoes With juices
  • 3 cups Fresh spinach Packed
  • 2 teaspoon Italian seasoning Dried herb blend
  • ½ cup Parmesan cheese Grated for garnish
  • ¼ teaspoon Red pepper flakes Optional for heat
  • ¼ cup Fresh basil Chopped for garnish
  • 2 tablespoon Olive oil For cooking sausage
  • 1 teaspoon Salt Plus more to taste
  • ½ teaspoon Black pepper Freshly ground

Method
 

  1. Heat oil in pot, cook Italian sausage 7 to 10 minutes breaking into pieces until browned
  2. Add diced onion, cook 3 to 4 minutes, add garlic and pepper flakes for 1 minute
  3. Pour in chicken broth and diced tomatoes with juices, scraping up browned bits
  4. Add Italian seasoning, salt and pepper, bring to boil
  5. Reduce heat to medium, simmer 10 minutes for flavors to meld
  6. Stir in heavy cream mixing thoroughly until incorporated
  7. Add tortellini, simmer 5 to 7 minutes for fresh or 7 to 10 minutes for frozen until tender
  8. Stir in fresh spinach, cook 1 to 2 minutes until wilted
  9. Taste and add more salt and pepper if needed
  10. Ladle into bowls, garnish with Parmesan and fresh basil
