Keto Lemonade

A pale golden, properly tart sugar-free lemonade made with fresh lemon juice and a keto simple syrup dissolved in warm water first for a completely smooth, crystal-free finish. Served over ice with floating lemon slices, fresh mint, and dark metal straws.

Ingredients
  

  • 1 cup fresh lemon juice (about 6 to 8 lemons) Roll lemons firmly on the counter before cutting for maximum juice yield
  • 4 cups cold water Adjust slightly more or less depending on preferred tartness
  • 0.5 cup powdered erythritol or monk fruit sweetener Must be dissolved in warm water first to prevent crystals settling at the bottom
  • 0.25 cup warm water for the syrup Combined with the sweetener and stirred until completely clear before adding to the pitcher
  • 0.25 teaspoon fine sea salt Sharpens the lemon flavor and prevents a flat taste without any sugar backing
  • large ice cubes Fills each glass two thirds full before the lemonade is poured
  • thin lemon slices Tucked against the inside wall of each glass and floating in the pitcher as shown
  • fresh mint sprigs Large generous sprigs floating in the pitcher and tucked upright in each glass

Equipment

  • 1 Juicer or citrus press For extracting maximum juice from each lemon efficiently
  • 4 Tall faceted or straight-sided glasses The faceted glass shape shown in the foreground of the image
  • 1 Small bowl or measuring cup For dissolving the keto sweetener into warm water syrup
  • 1 Long spoon For stirring the pitcher and pressing mint below the surface
  • 1 Wooden serving board The wooden board the glasses sit on in the image

Method
 

  1. Combine powdered keto sweetener with ΒΌ cup of warm water in a small bowl and stir continuously for 60 to 90 seconds until every granule has dissolved completely and the liquid is clear with no visible particles.
  2. Roll each lemon firmly on the counter, cut and juice 6 to 8 lemons until you have exactly 1 cup, then strain through a fine mesh sieve to remove all seeds and pulp.
  3. Pour the cooled keto simple syrup into a large clear pitcher first, add the strained lemon juice, and stir briefly to combine before adding any water.
  4. Add 4 cups of cold water gradually while tasting so you can stop when the tartness and sweetness are in the right balance, then stir in the fine sea salt.
  5. Add a generous handful of ice cubes to the pitcher along with 2 to 3 thin lemon slices and 2 to 3 full fresh mint sprigs pressed gently below the surface so they release fragrance into the liquid.
  6. Fill each tall glass two thirds full with large ice cubes then tuck one or two thin lemon slices against the inside glass wall so they show through from the outside as shown in the image.
  7. Pour the lemonade from the pitcher over the ice in each glass, leaving a small amount of room at the top so the mint garnish sits above the liquid line.
  8. Tuck a full generous mint sprig upright into each glass so the leaves sit above the rim, add a dark metal straw angled slightly toward the back, and serve immediately on a wooden board with the pitcher alongside as shown in the image.

Notes

Always dissolve the keto sweetener in warm water first before adding cold water and lemon juice; cold water will not dissolve most keto sweeteners fully and the crystals will settle at the bottom. Add the pinch of sea salt before tasting as it sharpens the lemon flavor significantly. Add garnishes only at the moment of serving.
