  • 1.5 cups all purpose flour
  • 1.5 teaspoon baking powder Fresh
  • 0.25 teaspoon salt
  • 1 cup fresh blueberries Not frozen
  • coarse sugar For sprinkling
  • extra lemon zest For garnish

Method
 

  1. Preheat oven to 375°F line muffin tin with paper liners or grease wells
  2. Add cottage cheese to blender blend 30 seconds until completely smooth
  3. Transfer blended cottage cheese to bowl add eggs oil sugar lemon zest vanilla whisk until combined
  4. Whisk together flour baking powder salt in separate bowl
  5. Pour dry into wet fold gently just until flour disappears don't overmix
  6. Gently fold in blueberries being careful not to crush
  7. Scoop batter into muffin cups filling three quarters full
  8. Sprinkle with coarse sugar and extra zest if desired
  9. Bake 18 to 22 minutes until golden and toothpick comes out clean
  10. Cool in pan 5 minutes transfer to wire rack
