Method

  3. Pour the sweetened condensed milk and fresh lemon juice together inside a large bowl, whisking until the mixture thickens into a glossy paste.
  4. Stir half of your fresh lemon zest directly into the thick yellow milk reduction base, saving the remaining half on your counter.
  5. Beat the cold heavy whipping cream inside a separate chilled glass bowl on high speed until stable, stiff peaks form cleanly.
  6. Spoon one-third of your stiff cream into the thick yellow base, folding gently with a spatula to loosen the dense texture smoothly.
  7. Add the remaining whipped cream slowly, folding with gentle circular motions just until the white and yellow layers blend uniformly.
  8. Transfer the fluffy mousse into a piping bag with a star tip and squeeze elegantly into individual glass jars to build thick swirls.
  9. Crown the swirling peaks with the saved lemon zest and slide the jars into the refrigerator to set firmly for one hour before serving cold.

Notes
