Loaded Hash Browns with Scrambled Eggs

Ingredients
  

  • 3 medium russet potatoes, peeled and grated (about 3 cups) Russets have higher starch content; grate quickly to prevent oxidizing before squeezing
  • ½ teaspoon garlic powder Blended into potato before forming so seasoning runs through the interior
  • ½ teaspoon onion powder Adds savory depth without requiring raw onion in the patty

  • 6 large eggs, room temperature 2 per serving; room temperature eggs produce softer, more evenly cooked curds
  • 2 tablespoon unsalted butter (for eggs) Use unsalted so you control salt level of the scramble independently
  • 1 tablespoon whole milk or heavy cream Whisked into eggs before cooking to keep curds soft and moist

Method
 

  1. Peel and grate the russet potatoes on the large holes of a box grater into a large bowl, then transfer to the center of a clean kitchen towel and squeeze firmly over the sink until no more liquid drips and the potato feels almost dry through the fabric.
  2. Return the squeezed potato to a clean dry bowl, add the garlic powder, onion powder, salt, and black pepper, and mix with your hands until the seasoning is evenly distributed with no dry pockets at the bottom of the bowl.
  3. Divide the seasoned potato into 6 equal portions and press each one firmly between your palms into a compact round disc about 1 cm thick and 8 cm in diameter, squeezing hard enough that the shreds bind together and the patty holds its shape when set down.
  4. Heat a large heavy skillet over medium-high heat for 2 minutes, add the oil or clarified butter and allow it to shimmer across the surface, then place the patties in the pan without crowding, press each one firmly with the back of a spatula immediately, and cook the first side for 4 to 5 minutes completely undisturbed until a deep golden-orange crust forms and the patty releases cleanly from the surface.
  5. Flip each patty carefully with a wide flat spatula, press gently again, and cook the second side for 3 to 4 minutes until it matches the color of the first side, then transfer to a wire rack to keep the base crisp while you prepare the eggs and toppings.
  6. Crack the eggs into a medium bowl, add the milk or cream, salt, and black pepper, and whisk vigorously until fully combined and uniformly yellow with no white streaks, then place a non-stick pan over medium-low heat, melt the butter until foamy without browning, and pour in the egg mixture.
  7. Stir the eggs slowly and continuously using a silicone spatula in gentle folds from the edges toward the center so large soft curds form gradually, then remove the pan from heat while the eggs still look slightly underdone and glossy in the center so they finish from residual heat.
  8. Set two hash brown patties on each plate, spoon the soft scrambled eggs over the top, add irregular mounds of cottage cheese, distribute the avocado cubes generously, then scatter the everything bagel seasoning, sliced green onions, and a generous crack of coarse black pepper across the entire surface and serve immediately.

Notes

Squeeze the grated potato firmly and completely dry before forming the patties — this is the single most important step for a crisp crust. Do not move the patties during the first 4 minutes in the pan. Rest finished patties on a wire rack, never paper towels, to keep the base crisp. Scramble the eggs on medium-low heat and remove from the pan while they still look slightly underdone. Add the cottage cheese and avocado only at the moment of serving.
