Mango Iced Tea

Ingredients
  

  • 4 black tea bags Strong black tea gives the best amber color and flavor base
  • 4 cups boiling water For steeping the tea to full strength
  • 1 cup fresh mango, diced into small cubes Use ripe mango for the sweetest flavor and best color
  • ΒΌ cup mango syrup or mango puree Deepens the mango flavor throughout the drink
  • 2 tablespoon honey or sugar Adjust to taste; dissolve while tea is still warm
  • 1 tablespoon fresh lemon juice Brightens flavor and keeps the color vivid
  • fresh mint sprigs For garnish; tuck into mango topping before serving
  • ice cubes Fill cups generously before pouring tea

Equipment

Method
 

  1. Place 4 black tea bags in a heatproof pitcher and pour 4 cups of boiling water over them to begin steeping.
  2. Let the tea steep for exactly 5 minutes then lift the bags out gently without squeezing to avoid releasing bitter tannins.
  3. Stir honey or sugar into the hot tea immediately so it dissolves fully before the liquid cools down.
  4. Set the pitcher aside and allow the tea to cool to room temperature completely before adding the mango ingredients.
  5. Stir mango syrup or puree and fresh lemon juice into the cooled tea until evenly combined and the color deepens to amber-orange.
  6. Refrigerate the tea base for at least 30 minutes until fully cold before building the cups.
  7. Dice fresh mango into small even cubes and fill tall clear cups generously with ice then add a handful of mango cubes into the ice layer.
  8. Pour the chilled mango tea slowly over the ice so the amber color fills the cup evenly without splashing.
  9. Pile the reserved mango cubes on top of the ice so they mound slightly above the rim of the cup as shown in the image.
  10. Tuck fresh mint sprigs into the mango topping at the center and serve immediately while the ice is still fully intact.

Notes

Steep tea for exactly 5 minutes and never squeeze the bags to avoid bitterness. Cool the tea completely before adding mango syrup. Assemble cups just before serving so the ice stays intact and the color stays vibrant.
