Method
- Combine equal parts sugar and water in a small saucepan over medium heat, stir until completely dissolved and clear, then remove from heat and cool to room temperature before using.
- Add frozen mango, cooled simple syrup, fresh lime juice, fine sea salt, and water to a high-speed blender and blend on high for 45 to 60 seconds until completely smooth with no icy patches remaining.
- Taste the base and adjust with an extra squeeze of lime if flat or an extra teaspoon of syrup if the mango is particularly tart, then pour into a shallow wide freezer-safe container.
- Press plastic wrap directly onto the surface of the mango base to prevent ice crystal formation, then freeze for 2 hours until the edges are firm and the center is still slightly slushy.
- Remove from the freezer and transfer the partially frozen mixture back to the blender, blend for 30 to 45 seconds until smooth again breaking up all developing ice crystals.
- Return the blended sorbet to the container, press plastic wrap directly onto the surface again, and freeze for a final 3 to 4 hours until completely firm and scoopable throughout.
- Remove from the freezer and allow to sit at room temperature for 4 to 5 minutes so the sorbet softens just enough for a clean scoop without crumbling at the edges.
- Dip an ice cream scoop briefly in hot water, dry it, then scoop three smooth round balls into a chilled glass dessert bowl stacking them slightly against each other as shown in the image.
- Place two fresh whole raspberries against the front scoop and tuck a full mint sprig upright between the raspberries and the rear scoop exactly as shown in the image before serving immediately.
Notes
Never skip the mid-freeze blend at the two-hour mark as this breaks the developing ice crystals and is the step that determines the final texture. Press plastic wrap directly onto the sorbet surface during both freezes. Allow 4 to 5 minutes at room temperature before scooping for clean round balls.
