Mini Blackberry Lavender Cheesecakes

Ingredients
  

  • 1.5 cups graham cracker crumbs (about 10 full crackers) Should feel like damp sand when pressed between fingers after mixing with butter

Method
 

  1. Line a standard 12-cup muffin tin with paper liners, combine the graham cracker crumbs and sugar in a bowl, pour in the melted butter, and stir until every crumb is coated and the mixture holds together when pressed, then divide evenly among the 12 cups and press firmly into a compact, even layer using the flat base of a small glass.
  2. Refrigerate the crust-lined tin for 15 minutes while you prepare the filling so the butter firms the crust into a stable base that holds the filling without shifting when the cream cheese mixture is added.
  3. Warm the heavy cream in a small saucepan over low heat until it steams without simmering, remove from heat, add the dried culinary lavender buds, steep for 8 minutes, then strain through a fine-mesh sieve into a clean bowl pressing the buds gently, discard the spent buds, and allow the infused cream to cool to room temperature before whipping.
  4. Beat the room temperature cream cheese on medium speed for 2 minutes until completely smooth and lump-free, add the sifted powdered sugar, vanilla extract, and pinch of salt, and beat for 1 more minute until light and creamy.
  5. Whip the cooled lavender cream in a separate bowl to medium-stiff peaks on high speed, then fold it into the cream cheese mixture using a large spatula with slow strokes from the bottom of the bowl upward until no white streaks remain and the filling looks uniformly smooth.
  6. Remove the chilled crust-lined tin from the refrigerator, spoon the lavender filling evenly over each crust filling each cup to just below the rim, smooth the surface flat with the back of the spoon, tap the tin gently on the counter a few times to release air bubbles, cover loosely with plastic wrap, and refrigerate for a minimum of 4 hours or overnight.
  7. While the cheesecakes set, combine the blackberries, sugar, and lemon juice in a small saucepan over medium heat, stir occasionally until the berries collapse and bubble actively for 5 to 6 minutes, then stir in the cornstarch-water slurry and stir continuously on low for 1 to 2 minutes until the sauce thickens to a coat-the-spoon consistency; remove from heat and cool completely.
  8. Lift the fully chilled cheesecakes from the tin by their paper liners, set them on a serving board, spoon the cooled blackberry sauce over the top of each one starting at the center and letting it drip naturally down the sides, pile 3 to 5 fresh whole blackberries on top of each cheesecake pressing them gently into the tacky sauce, and serve immediately.

Notes

Use only dried culinary lavender; decorative or essential oil lavender is not safe for food use. Steep the lavender in warm cream and strain before whipping to keep the filling smooth and free of visible bud pieces. Allow the full 4-hour minimum chill before unmolding and do not sauce the cheesecakes until the moment of serving. Cool the blackberry sauce completely before drizzling so it sits on the surface and shows its full deep purple color.
