Method

  4. Beat one cup of the cold heavy cream, powdered sugar, and vanilla extract inside a chilled bowl on high speed until stiff peaks form.
  5. Spoon one-third of the stiff cream directly into the lukewarm chocolate container, folding gently with a spatula to loosen the texture smoothly.
  6. Add the remaining whipped cream slowly, folding with gentle circular motions just until the white and brown layers blend uniformly.
  7. Spoon the fluffy chocolate mixture evenly into clear glass cups, tapping them gently on a towel to level the surface lines cleanly.
  8. Whip the remaining half-cup of cold heavy cream quickly into a pillowy white cloud, dollop over the center of the cups, and scatter dark chocolate shavings before chilling.

Notes

Allow the melted dark chocolate to cool completely to a lukewarm temperature on your counter before folding it into the whipped cream to prevent temperature shock or graininess. Use an icy-cold bowl and beaters to achieve maximum volume during the heavy cream whipping steps.
