Peruvian Chicken and Rice with Green Sauce

Ingredients

Method
 

  1. Combine the cumin, smoked paprika, garlic powder, turmeric, oregano, salt, and black pepper in a small bowl and stir until evenly blended, then pat the chicken thighs completely dry with paper towels on all sides, drizzle with olive oil, and press the spice rub firmly onto both skin and flesh sides of each thigh.
  2. Allow the rubbed chicken to rest at room temperature for 15 minutes while you rinse the rice under cold water until the water runs mostly clear, then combine the chicken broth, turmeric, olive oil, and salt in a medium saucepan and bring to a simmer before adding the rice, reducing heat to low, covering tightly, and cooking for 18 minutes without lifting the lid.
  3. Roast the jalapeño directly over a gas flame or under the oven broiler, turning occasionally until the skin is blistered and blackened in patches all over, then steam it in a covered bowl for 5 minutes, peel away the skin, and allow the pepper to cool completely to room temperature before blending.
  4. Heat a large oven-safe skillet over medium-high heat for 2 full minutes, place the chicken thighs skin side down without crowding, press each one gently for the first 10 seconds, and sear for 6 to 7 minutes without moving until the skin releases cleanly and looks deeply golden with visible char at the edges.
  5. Flip the chicken thighs using tongs, sear the flesh side for 3 minutes until the underside takes on color, then transfer the skillet to a preheated 400°F oven and roast for 18 to 20 minutes until an instant-read thermometer reads 165°F at the thickest part of the thigh.
  6. Add the cooled roasted jalapeño, cold fresh cilantro, aji amarillo paste, raw garlic cloves, mayonnaise, olive oil, and lime juice to a blender and blend on high for 30 to 45 seconds until completely smooth and uniformly green, then taste and adjust with salt and additional lime juice before transferring to a small bowl and refrigerating until ready to serve.
  7. Remove the chicken from the oven and rest for 5 minutes in the pan, then lift the lid from the rice, check that all the broth has been absorbed, fluff gently with a fork, and fold the chopped fresh cilantro through with two or three light strokes so the green flecks distribute evenly throughout the rice.
  8. Spoon a generous base of the turmeric-yellow cilantro rice onto a wide shallow bowl spreading it to the edges, arrange the rested chicken thighs on top slightly overlapping, spoon the cold green sauce generously over each thigh starting at the center so it pools on top and drips into the rice below, scatter fresh cilantro leaves over the finished plate, and serve immediately.

Notes

Pat the chicken completely dry before applying the spice rub for the best sear. Allow the roasted jalapeño to cool fully before blending the green sauce; warm ingredients cause the cilantro to grey quickly. Keep the sauce refrigerated until the moment of serving so it stays vivid green and cold against the warm chicken. The sauce tastes best on the second day after the garlic mellows.
