Pistachio Rose Milk Cake

Ingredients
  

  • 1 cup Almond flour For the gluten-free crust
  • ½ cup Pistachios Toasted, plus extra for garnish
  • ¼ cup Coconut oil Melted
  • 16 oz Cream cheese Softened, divided use
  • 1 cup Heavy cream Cold, divided use
  • ½ cup Powdered sugar Divided use
  • 2 teaspoon Unflavored gelatin Divided use
  • 1 teaspoon Pistachio paste Or extract
  • ½ teaspoon Rose water Use sparingly
  • 1 dash Pink food coloring Or beetroot powder
  • 1 tablespoon Dried rose petals For garnish

Equipment

  • 1 8x8-inch Square Pan For clean, modern slices
  • 1 Food processor To blend the nut crust
  • 1 Electric mixer To whip the mousse layers

Method
 

  1. Pulse almond flour, toasted pistachios, and melted coconut oil. Press into an 8x8 square pan and freeze.
  2. Bloom 1 teaspoon gelatin and dissolve. Whip half the cream cheese, heavy cream, and sugar with pistachio paste and the gelatin.
  3. Spread the white mousse evenly over the chilled crust and return to the freezer for 20 minutes to set.
  4. Bloom remaining gelatin. Whip remaining dairy and sugar with rose water, pink coloring, and dissolved gelatin.
  5. Spread the pink mousse flat over the set white layer and refrigerate for 4 hours until completely firm.
  6. Slice into squares with a hot knife and garnish heavily with crushed pistachios and dried rose petals.

Notes

Ensure the white mousse layer is completely firm before spreading the pink rose layer on top to maintain perfectly distinct, sharp lines.
