- Heat a small pan over high heat until very hot, add olive oil, then place cherry tomatoes cut-side down and press gently so the cut face makes full contact with the hot surface.
- Cook tomatoes without moving for 2 to 3 minutes until the cut sides are deeply golden and the skins have blistered, then season with flaky salt and set aside on the plate.
- Halve and slice the avocado into even pieces, fan into the arc shape shown in the image on the upper left section of the plate, and season with flaky salt, black pepper, and a scatter of chili flakes.
- Place the burrata or cream cheese round in the lower right section of the plate and dust with chili flakes and a small pinch of flaky salt so it is ready before the eggs are cooked.
- Crack eggs into a small bowl, whisk until completely combined with no streaks, and season with a small pinch of salt before the pan is even on the heat.
- Place butter in a small non-stick pan over the lowest possible heat setting and allow it to melt completely without foaming or browning before adding the eggs.
- Pour whisked eggs into the cold butter and begin moving immediately with a silicone spatula using slow, wide strokes that pull large soft curds from the base without breaking them.
- Cook for 3 to 5 minutes on the lowest heat, briefly lifting the pan from the heat if the eggs begin moving too quickly, until the curds are large, soft, and glossy with a few liquid patches still visible.
- Remove the pan from the heat immediately and spoon the eggs into the lower left and center section of the plate beside the other components as they will continue cooking from residual heat.
- Scatter chili flakes over the eggs and remaining plate surface, tuck fresh thyme sprigs into the eggs and over the cheese, add a final pinch of flaky sea salt across everything, and serve immediately.
Notes
Cook the eggs over the absolute lowest heat setting and remove from the pan while a few liquid patches are still visible as they continue cooking from residual heat. Slice the avocado last to prevent browning. Blister the tomatoes in a very hot dry pan for caramelized edges.
