Raspberry Passionfruit Tequila Sour

Ingredients
  

  • 2 oz silver or reposado tequila Silver keeps the drink bright and clean; reposado adds mild vanilla-oak warmth
  • 1 oz fresh passionfruit juice or passionfruit puree Scooped from 2 ripe passionfruits or use a quality puree; provides the gold mid-layer color
  • ¾ oz fresh lemon juice Always fresh-squeezed; bottled lemon juice tastes flat and metallic in comparison
  • ½ oz simple syrup Adjust based on sweetness of your passionfruit; reduce by a quarter if using sweetened puree
  • 1 egg white, room temperature Room temperature egg whites foam more readily; one white is enough for two cocktails if needed
  • ¾ oz raspberry syrup Poured as the base layer in the glass; creates the deep red gradient at the bottom
  • ice cubes For filling the glass and for the second shake to chill and compress the foam
  • ½ fresh passionfruit, for garnish Rested cut-side up on the left rim of the glass; seed-dotted interior faces outward

Equipment

Method
 

  1. Pour the raspberry syrup into a short rocks glass or crystal old-fashioned glass, tilt slowly to coat the base, fill with ice cubes, and place the glass in the freezer or on crushed ice for 3 to 5 minutes to chill; prepare all garnishes while the glass chills.
  2. Add the egg white to a cocktail shaker first, then add the tequila, passionfruit juice or puree, fresh lemon juice, and simple syrup over the top.
  3. Seal the shaker tightly and shake vigorously without ice for a full 20 seconds; this is the dry shake that builds the foam structure before the ice is added, and sustained vigorous motion is essential for a stable, thick foam layer.
  4. Open the shaker carefully, add a full handful of ice cubes, seal again, and shake vigorously for another 15 seconds to chill the drink, compress the foam bubbles into a denser structure, and bring the temperature down to the correct serving temperature.
  5. Remove the glass from the freezer, hold it at a slight angle, and position a bar spoon bowl-side down just above the ice surface; strain the shaken cocktail slowly through a fine-mesh strainer over the back of the spoon so the liquid flows gently down the side without driving through the raspberry base layer.
  6. Pour until the glass is filled to about 1 cm below the rim, then allow the drink to settle for 10 to 15 seconds so the raspberry sinks to the base, the golden passionfruit-tequila layer settles in the middle, and the foam migrates to the top in a thick white crown.
  7. If the foam needs refreshing, scoop any remaining foam from inside the shaker with a small spoon and set it gently on the surface, smoothing the top with the back of the spoon into a clean, level white layer that rises slightly above the rim.
  8. Press the halved passionfruit cut-side up onto the left rim, lay the raspberry skewer across the right rim above the foam, tuck the mint sprig behind the passionfruit so the leaves fan upward, and serve immediately on a small plate or napkin.

Notes

The dry shake with no ice for a full 20 seconds is the step that builds the foam; skipping or shortening it produces a thin layer that collapses almost immediately. Pour the cocktail slowly over the back of a bar spoon to preserve the raspberry-to-gold gradient. Chill the glass before building the drink. Have all garnishes ready before opening the shaker so the foam does not settle before the drink is served.
