  • 3 large eggs whipped until pale and frothy for crust rise
  • ¾ cup all-purpose flour sifted well to bind the chocolate paste texture

Method
 

  1. Roast the fresh cherry halves on a parchment-lined pan at 400°F for twelve minutes until slightly caramelized.
  2. Melt the dark chocolate chips and unsalted butter over a double boiler until smooth and velvety.
  3. Beat the eggs and sugar together vigorously with a mixer until the mixture looks pale and frothy.
  4. Fold the cooled chocolate and sifted flour gently into the egg base until a uniform dark paste forms.
  5. Pour batter into an 8x8 pan, arrange roasted cherries on top, and bake at 350°F for twenty-five minutes.

Notes

Roast the fresh cherries on a separate pan before adding them to the batter to draw out excess moisture and prevent a soggy bake. Whip your sugar and eggs until pale and frothy to achieve a shiny, tissue-thin crinkle crust.
