Salmon Balls with Creamy Avocado Sauce

Ingredients
  

  • 1 lb Fresh salmon fillets Skin removed, finely chopped
  • ¾ cup Panko breadcrumbs Divided use (½ cup for mix, ¼ cup for rolling)
  • 1 large Egg Lightly beaten
  • 2 tablespoon Fresh chives Finely chopped
  • 2 large Avocados Ripe, pitted and peeled
  • ¼ cup Plain Greek yogurt For the sauce
  • 1 tablespoon Lime juice Freshly squeezed
  • 1 clove Garlic Minced
  • 2 tablespoon Cooking oil Neutral oil for pan-frying
  • 1 tablespoon Fresh parsley Chopped for garnish

  • 1 Large skillet For achieving a golden crust
  • 1 Chef's Knife To hand-chop the salmon
  • 1 Blender For the velvety sauce

Method
 

  1. Gently fold the finely chopped salmon, ½ cup Panko, egg, chives, salt, and pepper in a bowl. Cover and refrigerate for 30 minutes.
  2. Scoop the chilled mixture and roll into golf-ball-sized spheres, then coat the outside lightly in the remaining Panko breadcrumbs.
  3. Heat oil in a large skillet over medium-high heat. Pan-fry the salmon balls for 6-8 minutes, turning gently until golden and cooked through.
  4. While the salmon cooks, blend the avocado, Greek yogurt, lime juice, garlic, and a pinch of salt until perfectly smooth.
  5. Arrange the crispy hot salmon balls on a plate, drizzle generously with the cool avocado sauce, and garnish with fresh parsley.

Notes

Always chill the raw salmon mixture in the refrigerator for at least 30 minutes before rolling; this helps the proteins bind and prevents the balls from falling apart in the pan.
