Ingredients
  

  • 3 cups Sushi rice Uncooked short grain
  • ¼ cup Rice vinegar For seasoning rice
  • 2 tablespoon Sugar For sushi rice seasoning
  • 1 teaspoon Salt For rice seasoning
  • 1 lb Salmon fillets Fresh or use 2 cans salmon
  • 8 oz Cream cheese Softened to room temperature
  • ½ cup Japanese mayonnaise Kewpie preferred
  • 3 tablespoon Sriracha sauce Adjust for spice level
  • 2 tablespoon Soy sauce For salmon mixture
  • 3 tablespoon Furikake seasoning Japanese rice seasoning
  • 4 stalks Green onions Sliced thin
  • 4 sheets Nori seaweed For serving
  • 2 tablespoon Sesame seeds Black and white mixed
  • 1 medium Avocado Diced, optional garnish

Equipment

  • 9x13 inch baking dish Glass or ceramic for even baking
  • Rice cooker Or large pot for cooking rice
  • Large mixing bowl For seasoning sushi rice
  • Medium mixing bowls For salmon and spicy mayo
  • Spatula For spreading layers evenly
  • Small whisk For mixing spicy mayo
  • Sharp knife For slicing green onions

Method
 

  1. Cook sushi rice per package, mix rice vinegar, sugar and salt, fold into hot rice
  2. Spread seasoned rice in greased baking dish, press down gently to compact
  3. Bake salmon at 375°F for 15 minutes if raw, or drain canned salmon
  4. Combine flaked salmon, cream cheese, half the mayo, soy sauce and furikake
  5. Layer salmon mixture evenly over rice, spreading edge to edge
  6. Whisk remaining mayo with sriracha until smooth and combined
  7. Drizzle or spread spicy mayo over salmon layer evenly
  8. Sprinkle furikake and sesame seeds over spicy mayo
  9. Bake 10 to 15 minutes until golden brown and slightly caramelized
  10. Top with green onions, rest 5 minutes, serve with nori sheets
