  • 4 medium flour tortillas Room temperature for easy folding
  • ½ lb breakfast sausage Crumbled and browned
  • 4 large eggs Lightly beaten
  • ½ cup cheddar cheese Freshly shredded for best melting
  • 1 tablespoon fresh parsley Chopped for garnish

Method
 

  1. Brown the crumbled sausage in a skillet over medium heat to render the fat until the meat is fully cooked.
  2. Pour the beaten eggs over the drained meat to combine flavors until the mixture is softly set.
  3. Sprinkle cheddar cheese and warm filling onto the tortillas to prepare them for folding until evenly distributed.
  4. Roll the tortillas tightly from the edge to secure the center until a neat cylinder forms.
  5. Toast the wraps seam side down in a warm skillet to seal them until the bottom is deeply golden.
  6. Flip the wraps carefully to crisp the other side until the entire exterior is beautifully browned.
  7. Rest the toasted wraps on a cutting board for one minute to set the cheese until slightly cooled.
  8. Slice the wraps diagonally across the middle to reveal the melted filling until ready to serve.

Notes

Always toast the seam side first to seal the tortilla shut. Drain excess grease from the meat to prevent soggy bottoms.
