Strawberry Banana Pudding

Ingredients
  

For the Pudding Base
  • 2 boxes Instant vanilla pudding mix 3.4 oz each
  • 3 cups Cold milk Whole milk works best
  • 1 can Sweetened condensed milk 14 oz
  • 8 oz Cream cheese Softened
  • 12 oz Cool Whip Or whipped cream
  • 2 teaspoon Vanilla extract
For the Layers
  • 1 box Vanilla wafers 11 oz box
  • 2 lbs Fresh strawberries Sliced
  • 4 medium Ripe bananas Sliced
  • 2 tablespoon Lemon juice Prevents browning
For Topping
  • 1 cup Whipped cream For decorating
  • ¼ cup Crushed vanilla wafers For garnish
  • ¼ cup Strawberry glaze or jam Optional drizzle

Equipment

  • 1 Clear glass trifle bowl or 9x13 dish For showcasing layers
  • 1 Large mixing bowl For pudding mixture
  • 1 Wire whisk or electric mixer For smooth pudding
  • 1 Offset spatula or large spoon For spreading layers
  • 1 Sharp knife For slicing fruit
  • 1 Cutting board For fruit prep

Method
 

  1. Whisk vanilla pudding mix with cold milk for 2 minutes until thickened, add condensed milk and cream cheese, beat smooth
  2. Fold in Cool Whip gently until fluffy and consistent, add vanilla extract
  3. Refrigerate pudding while prepping fruit so it thickens properly
  4. Wash, hull and slice strawberries into quarters, pat dry with paper towels
  5. Peel and slice bananas into quarter inch rounds, toss with lemon juice
  6. Cover bottom of trifle bowl with vanilla wafers in single layer
  7. Spread quarter of pudding mixture over wafers smoothly
  8. Arrange banana slices over pudding, add layer of sliced strawberries
  9. Continue layering wafers, pudding, bananas and strawberries until ingredients used, ending with pudding
  10. Decorate top with whipped cream, whole fruit and crushed wafers, refrigerate 4 hours minimum before serving
