- Hull and halve fresh strawberries, place on a small lined tray, and freeze for 30 to 45 minutes until partially frozen but not completely solid so they blend with visible texture.
- Allow frozen pineapple chunks to sit at room temperature for 3 to 4 minutes so the blender can process them without straining, then chill all juices in the refrigerator until needed.
- Add frozen pineapple, pineapple juice, orange juice, half the honey, half the lime juice, and ice cubes to the blender and blend on high for 30 to 45 seconds until smooth, thick, and uniformly golden.
- Taste the pineapple base and adjust sweetness if needed, then pour into a large bowl or pitcher and place in the freezer for 10 minutes while preparing the strawberry base.
- Add partially frozen strawberries, remaining honey, and remaining lime juice to the cleaned blender and pulse briefly in short bursts so visible strawberry pieces and streaks remain throughout the base.
- Taste the strawberry base and add a small amount of honey if the berries are tart, then set aside at room temperature while retrieving the pineapple base from the freezer.
- Spoon the pineapple slushie base into tall stemmed glasses filling each one about two thirds full, then add the strawberry base in several dollops over the top rather than pouring in one stream.
- Use a long spoon or skewer to fold the strawberry through the pineapple base with two or three gentle strokes so visible swirls and suspended strawberry pieces appear throughout the glass as shown in the image.
- Hook a fresh pineapple wedge over the rim of each glass, rest a halved strawberry against it, and tuck a full mint sprig behind both pieces to match the garnish shown in the image.
- Serve immediately before the slushie begins to melt so the swirl stays visible and the golden frosty texture is at its best when it reaches the table.
Notes
Keep the pineapple base in the freezer until the last moment before assembling so it stays thick enough to hold the swirl. Fold the strawberry through with two or three strokes only to preserve the visible swirl effect. Serve immediately after garnishing.
