  • 4 tablespoon butter
  • 1 lb ground sausage
  • 1 cup celery Diced
  • 1 cup onion Diced

  • 1 tablespoon fresh thyme
  • 0.5 cup dried cranberries
  • 2 eggs Beaten
  • salt and pepper To taste
For Coating
  • 2 cups panko breadcrumbs
  • 4 tablespoon melted butter
  • 2 tablespoon fresh parsley Chopped

Method
 

  1. Toast bread cubes heat broth and butter pour over bread let absorb
  2. Brown sausage in skillet breaking into crumbles remove from pan
  3. Sauté celery onion in drippings until soft add sage thyme
  4. Mix stuffing sausage vegetables cranberries eggs season refrigerate 30 minutes
  5. Preheat oven to 375°F line baking sheets with parchment
  6. Scoop mixture roll into 2 inch balls
  7. Dip in melted butter roll in panko pressing gently
  8. Bake 25 to 30 minutes until golden and crispy internal temp 165°F
  9. Let cool 5 minutes serve warm with gravy or cranberry sauce
