  • 3 large Eggs Room temperature
  • 2 teaspoon Vanilla extract Pure preferred
  • 4 oz White chocolate For drizzle topping
  • ¼ cup Holiday sprinkles Red and green for Christmas
  • ¼ cup Mini chocolate chips Optional garnish
  • 2 tablespoon Crushed candy canes Optional for Christmas version

Method
 

  1. Preheat oven to 350°F, line springform pan with parchment, grease sides
  2. Press sugar cookie dough evenly into pan bottom, half inch thick
  3. Bake 12 to 15 minutes until lightly golden, cool slightly
  4. Beat softened cream cheese 2 to 3 minutes until smooth and fluffy
  5. Add granulated sugar, beat 2 minutes until light and creamy
  6. Add sour cream and vanilla, beat until combined, add eggs one at a time on low
  7. Pour filling over crust, tap pan to release air bubbles
  8. Bake 35 to 40 minutes until edges set but center jiggles slightly
  9. Turn off oven, crack door, let cool in oven 1 hour
  10. Cool completely, refrigerate 4 hours, drizzle white chocolate, add sprinkles before serving
