Ingredients
  

  • 1 lb Ground beef 85/15 blend preferred
  • 12 oz Spaghetti pasta Break in half
  • 3 tablespoon Taco seasoning Store bought or homemade
  • 1 can (10 oz) Diced tomatoes with green chiles Rotel brand works great
  • 1 can (15 oz) Tomato sauce Plain variety
  • 2 cups Beef broth For cooking pasta
  • 1 medium Yellow onion Diced
  • 3 cloves Garlic Minced fresh
  • 2 cups Cheddar cheese Shredded, divided
  • 2 medium Fresh tomatoes Diced for topping
  • ¼ cup Fresh cilantro Chopped
  • ½ cup Sour cream Optional for serving
  • 2 tablespoon Olive oil For cooking beef
  • 1 teaspoon Salt To taste
  • ½ teaspoon Black pepper Freshly ground

Method
 

  1. Heat oil in skillet, cook ground beef 7 to 10 minutes until browned, leave 2 tablespoons fat
  2. Add diced onion, cook 3 to 4 minutes, add garlic for 1 minute
  3. Stir in taco seasoning, cook 1 minute to toast spices
  4. Pour in diced tomatoes, tomato sauce and beef broth, stir to combine
  5. Break spaghetti in half, add to skillet, push into liquid
  6. Bring to boil, reduce heat, simmer 12 to 15 minutes stirring frequently
  7. Cook until spaghetti tender and most liquid absorbed
  8. Remove from heat, stir in half the cheddar until melted
  9. Transfer to serving bowl, add remaining cheese, fresh tomatoes and cilantro
  10. Serve hot with optional sour cream dollops
