Tangy Honey Lime Chicken & Avocado Rice Stack

Ingredients
  

  • 1 lb chicken thighs, boneless/skinless, cubed Stays juicy
  • ΒΌ cup honey For sweetness and shine
  • 2 tablespoon soy sauce Or Tamari for GF
  • 2 limes, juiced and zested Fresh is best
  • 2 cups cooked jasmine rice Warm and fluffy
  • 1 large avocado, sliced Ripe but firm
  • 2 cloves garlic, minced Aromatic
  • 2 tablespoon red onion, diced For garnish
  • 1 tablespoon cilantro, chopped Fresh herb

Equipment

  • 1 Skillet For chicken
  • 1 Ring Mold Or tin can
  • 1 Rice cooker Optional
  • 1 Knife For prep

Method
 

  1. Cook rice and keep warm; mix lime zest in.
  2. Sear chicken in a skillet until golden brown.
  3. Add honey, lime, soy, and garlic; simmer to glaze.
  4. Stack rice, chicken, and avocado using a ring mold.

Notes

Use a clean empty tin can if you don't have a ring mold; grease the inside slightly for an easy release.
