Method
 

  1. Pat chicken breasts dry and cut into thick uniform pieces
  2. Season generously with chicken seasoning, salt, and pepper
  3. Let chicken rest at room temperature for 10 minutes
  4. Heat olive oil in cast iron skillet over medium high heat until smoking
  5. Add chicken pieces, sear 5 to 6 minutes without moving until deeply browned
  6. Turn chicken and sear another 4 to 5 minutes until cooked through
  7. Transfer chicken to plate and tent with foil to rest
  8. Reduce heat to medium, add butter to skillet and let melt
  9. Add garlic and thyme, cook 1 minute until fragrant
  10. Whisk in honey and lemon juice until smooth and glossy
  11. Add chicken back to skillet, basting with sauce
  12. Cook 2 to 3 minutes more, garnish with parsley and serve immediately
