Blackberry Pistachio Dream Bars

Ingredients
  

  • 2 cups graham cracker crumbs (about 14 full crackers) Should feel like coarse damp sand that holds together when pressed between two fingers

  • 6 tablespoon unsalted butter, melted Press crust firmly enough to hold a clean edge when cut

  • ½ cup powdered sugar, sifted Dissolves smoothly into cream cheese without grittiness

  • ½ cup heavy whipping cream, cold Whipped to medium-stiff peaks and folded in to lighten the cream cheese layer

  • 1 tablespoon cornstarch mixed with 2 tablespoon cold water Stirred in to thicken the compote to a set, sliceable consistency

Method
 

  1. Preheat the oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper leaving a 2-inch overhang on two sides; combine the graham cracker crumbs, sugar, and melted butter in a bowl, stir until every crumb is coated, then press firmly into a completely even layer in the lined pan using the flat base of a measuring cup.
  2. Bake the crust at 350°F for 10 to 12 minutes until the surface looks dry and the edges are lightly golden, then remove from the oven and allow to cool completely to room temperature on a wire rack before adding any filling.
  3. Beat the room temperature cream cheese on medium speed for 2 minutes until completely smooth and lump-free, add the sifted powdered sugar and vanilla extract, and beat for 1 more minute until light and creamy.
  4. Whip the cold heavy cream in a separate bowl to medium-stiff peaks, then fold it into the cream cheese mixture using a large spatula with slow strokes from the bottom upward until no white streaks remain and the filling looks uniformly smooth and slightly airy.
  5. Spread the cream cheese filling evenly over the fully cooled crust using an offset spatula, pressing gently to the edges so the layer is smooth and level, then cover with plastic wrap and refrigerate for a full hour before adding the blackberry layer.
  6. Combine the blackberries, sugar, and lemon juice in a medium saucepan over medium heat, stir occasionally until the berries collapse and the mixture comes to an active bubble (6 to 8 minutes), then stir in the cornstarch-water slurry and stir continuously on low for 1 to 2 minutes until the compote thickens to a coat-the-spoon consistency; remove from heat.
  7. Allow the compote to cool for 10 minutes, then drop the pistachio cream in 4 to 5 spots across the surface and drag a skewer through in slow figure-eight motions to marble the green through the dark purple without fully blending; the result should look like the swirled topping visible in the image.
  8. Remove the pan from the refrigerator, confirm the cream cheese layer is fully set and firm at the center, pour the warm blackberry pistachio topping slowly from the center outward, scatter the chopped pistachios evenly across the surface while the topping is still warm, cover loosely without pressing the wrap onto the surface, and refrigerate for a minimum of 4 hours or overnight before lifting from the pan, cutting with a hot wiped knife, and serving.

Notes

The cream cheese layer must chill for a full hour before the blackberry topping is added; skipping this step causes the layers to blend. Cool the blackberry compote for 10 minutes before marbling in the pistachio cream and pouring. Run the knife under hot water and wipe dry between each cut for the cleanest cross-section. These bars are best made the day before serving for the firmest, most sliceable result.
