Chocolate Raspberry Cheesecake Domes

Ingredients
  

  • 150 g dark chocolate brownie base, baked and cooled Bake thin, cool completely, and cut into circles matching the mold diameter
  • 250 g full-fat cream cheese, room temperature Must be at room temperature for a completely smooth, lump-free cheesecake layer
  • 200 ml heavy cream, divided 100ml whipped for the cheesecake layer, 100ml whipped for the mousse
  • 3 tablespoon powdered sugar Sweetens the cheesecake layer without making it heavy
  • 1 teaspoon vanilla extract The defining flavor of the white cheesecake layer visible in the cross-section
  • 0.5 cup raspberry compote or thick raspberry jam Spooned into the center well of the cheesecake layer as the hidden filling
  • 200 g dark chocolate, chopped, divided 100g melted for the mousse, 100g used for the ganache
  • 100 ml heavy cream for ganache Heated until just simmering then poured over the chopped chocolate
  • 1 teaspoon powdered gelatin Bloomed in 1 tablespoon cold water; sets the mousse for clean unmolding
  • 1 tablespoon cold water For blooming the gelatin before dissolving
  • 12 fresh raspberries Two per dome placed at the crown after the ganache is applied
  • 6 fresh mint sprigs Tucked between the raspberries at the crown of each dome

Equipment

  • 6 Silicone dome molds (6 to 7cm diameter) Silicone flexes for clean release of frozen layers without cracking
  • 1 Round cutter matching dome base diameter For cutting brownie circles that fit flush with the mold base
  • 1 Hand mixer or stand mixer For beating the cream cheese layer smooth
  • 1 Heatproof bowl and small saucepan For melting chocolate and making the ganache over simmering water
  • 1 Wire rack set over a tray For the ganache pour so excess drips collect on the tray below
  • 1 Instant-read or candy thermometer For checking ganache temperature before pouring; target is 35°C
  • 1 Offset spatula For smoothing each layer inside the mold before freezing

Method
 

  1. Bake brownie in a thin sheet at 175°C for 18 to 20 minutes until just set, cool completely, then cut into circles matching the diameter of your dome mold bases.
  2. Lightly grease silicone dome molds with neutral oil and set on a flat freezer-safe tray, then beat room-temperature cream cheese with powdered sugar and vanilla for 2 minutes until completely smooth.
  3. Fold soft-peak whipped cream into the cream cheese in two additions, then spoon into molds to just below halfway and make a small well in the center of each portion with the back of a spoon.
  4. Spoon a generous teaspoon of raspberry compote into the center well of each cheesecake portion so the filling is fully hidden inside, then freeze for 1 hour until completely firm.
  5. Bloom gelatin in cold water for 5 minutes, dissolve in hot water until clear, then melt 100g dark chocolate until smooth and cool to room temperature before combining with dissolved gelatin.
  6. Fold soft-peak whipped cream into the cooled chocolate-gelatin mixture in two additions until no streaks remain, then spoon over the frozen cheesecake layer filling each mold to the top.
  7. Press a brownie circle firmly onto the mousse base of each mold so it sits flush with the rim, cover tightly with plastic wrap, and freeze for a minimum of 4 hours or overnight until completely solid.
  8. Remove molds from the freezer, rest 2 to 3 minutes, then flex the silicone and invert each dome onto a wire rack set over a tray so the brownie base faces down and the smooth dome faces up.
  9. Heat 100ml cream until just simmering, pour over the remaining 100g chopped dark chocolate, stir slowly until completely smooth, then cool to 35°C before pouring over the domes.
  10. Spoon ganache slowly over each dome so it drapes down the sides in thick ribbons, immediately place two raspberries at the crown, tuck a mint sprig between them, dust lightly with powdered sugar, and transfer to serving plates.

Notes

Freeze each layer completely before adding the next. The completed dome needs a minimum of 4 hours in the freezer before unmolding. Cool the ganache to 35°C before pouring so it drapes in thick ribbons rather than running straight off. Remove from freezer 20 to 25 minutes before serving for clean slicing and a visible cross-section.
