Ingredients

  • 700 g frozen or fresh-cut fries Must be fully golden and crisp before toppings go on; never crowd the pan
  • 500 g ground beef, 80 percent lean Higher fat content gives the browning and flavor visible in the image
  • 1 teaspoon smoked paprika for the beef Part of the beef seasoning blend; also used in the sauce
  • 1 teaspoon garlic powder Blended into the raw beef before cooking for even seasoning throughout
  • 1 teaspoon onion powder Rounds out the beef flavor alongside the paprika and garlic
  • salt and black pepper to taste Season the beef generously as it cooks so flavor builds from inside the crumbles
  • 1.5 cups shredded cheddar cheese Scattered directly onto hot fries and melted in oven before the beef layer goes on
  • 8 pickled jalapeño rounds Arranged in a line down the center of the tray as shown in the image
  • 0.5 cup mayonnaise The creamy base of the burger sauce
  • 2 tablespoon ketchup Gives the sauce its pale pink-beige color visible across the tray
  • 1 tablespoon yellow mustard Adds tang to the sauce and balances the mayonnaise
  • 1 tablespoon pickle juice The acidic note that makes the sauce taste like a proper smash burger sauce
  • 0.5 teaspoon smoked paprika for the sauce Deepens the sauce color and echoes the beef seasoning
  • black pepper for the sauce The visible dark specks across the sauce surface in the image

Equipment

  • 1 Large rimmed sheet pan (33x45cm minimum) Silver tray as shown in the image gives the most even heat distribution
  • 1 Wide Skillet For browning and crumbling the seasoned beef over high heat
  • 1 Small bowl and whisk For combining the burger sauce ingredients
  • 1 Small squeeze bottle or piping bag For the controlled drizzle lines of sauce visible across the tray in the image
  • 1 Slotted spoon or spatula For draining excess fat from the cooked beef before layering
  • 1 Wooden spoon or spatula For breaking the beef into small uneven crumbles while it cooks

Method

  1. Spread fries in a single even layer on a large rimmed sheet pan and bake at 220°C for 25 to 30 minutes, flipping once halfway, until every fry is fully golden and crisp with no soft spots.
  2. Season hot fries immediately with salt then reduce oven temperature to 190°C and set the tray aside while the beef is prepared.
  3. Mix smoked paprika, garlic powder, onion powder, salt, and black pepper into the raw ground beef until evenly distributed, then cook in a wide skillet over high heat without stirring for 2 minutes so the underside develops a browned crust.
  4. Break the beef into small uneven crumbles and continue cooking until no pink remains and the edges of each crumble look caramelized, then drain excess fat by tilting the pan and spooning it off.
  5. Scatter shredded cheddar cheese evenly over the hot crisp fries on the sheet pan, then return the tray to the 190°C oven for 3 to 4 minutes until the cheese is fully melted and bubbling at the edges.
  6. Remove from the oven and immediately scatter the drained seasoned beef evenly across the melted cheese layer so every part of the tray has a similar ratio of fries to meat as shown in the image.
  7. Arrange pickled jalapeño rounds in a line down the center of the tray pressing them gently into the beef layer so they sit flat and visible exactly as shown in the image.
  8. Whisk mayonnaise, ketchup, yellow mustard, pickle juice, smoked paprika, and black pepper together in a small bowl until completely smooth and uniformly pale pink-beige in color.
  9. Transfer sauce to a squeeze bottle or zip-lock bag with a small corner cut off, then drizzle in slow back-and-forth lines across the entire tray so every section is covered as shown in the image.
  10. Serve the tray immediately at the center of the table with extra burger sauce on the side so everyone can reach in directly from the pan while the fries are still crisp.

Notes

Bake fries until completely crisp before adding any toppings. Drain the cooked beef thoroughly before layering to prevent a soggy base. Scatter cheese directly onto the hot fries and return to the oven until fully melted before adding the beef. Use a squeeze bottle for the drizzle lines visible in the image.
