Honey Orange Ricotta Mousse Domes

Ingredients
  

  • 500 g full-fat ricotta, drained overnight through cheesecloth Draining is non-negotiable for a smooth, firm texture
  • 200 ml heavy whipping cream Whipped to soft peaks before folding in
  • 3 tablespoon honey, plus extra for drizzling Warm slightly before drizzling for the best flow
  • 1 large orange, zested Zest only; no juice to avoid thinning the mousse
  • 1 teaspoon vanilla extract Adds warmth to the ricotta base
  • 2 teaspoon powdered gelatin Bloomed in 2 tablespoons cold water before dissolving
  • 2 tablespoon cold water For blooming the gelatin
  • 3 tablespoon crushed pistachios Scattered over honey drizzle just before serving
  • 4 mandarin orange segments, lightly glazed Warmed briefly in honey for the jewel-like finish on top
  • fresh mint sprigs Tucked into the top of each dome just before serving

Equipment

  • 4 Fluted silicone individual dessert molds (150-200ml) Essential for the ridged dome shape shown in the image
  • 1 Fine mesh strainer and cheesecloth For draining ricotta overnight
  • 1 Hand mixer or stand mixer For beating ricotta smooth and whipping cream
  • 1 Small bowl for gelatin blooming Placed in hot water to dissolve gelatin gently
  • 1 Offset spatula For smoothing the surface of filled molds
  • 4 Dark serving plates The dark background makes the white dome and amber honey stand out

Method
 

  1. Line a fine mesh strainer with cheesecloth, spoon in the ricotta, and refrigerate overnight for at least 8 hours to drain excess moisture completely.
  2. Transfer drained ricotta to a large bowl and beat with a hand mixer on medium speed for 2 full minutes until completely smooth with no visible lumps.
  3. Add honey, orange zest, and vanilla extract to the beaten ricotta and mix briefly until evenly combined and the mixture smells fragrant.
  4. Sprinkle gelatin over cold water in a small bowl, let it bloom for 5 minutes until spongy, then set the bowl in a larger bowl of hot water and stir until fully dissolved and clear.
  5. Whip heavy cream in a separate chilled bowl to soft peaks so it holds a gentle shape but still moves slightly when the bowl tilts.
  6. Stir dissolved gelatin into the ricotta mixture first, then fold in the whipped cream in two additions using slow circular strokes to preserve the air.
  7. Lightly grease fluted silicone molds with neutral oil, spoon in the mousse to the top without air gaps, and smooth the surface flat with an offset spatula.
  8. Cover molds with plastic wrap and place in the freezer for a minimum of 4 hours or overnight until completely firm from edge to center.
  9. Remove molds from the freezer and rest at room temperature for 3 to 4 minutes, then place a dark plate over each mold and flip quickly, lifting the mold straight up to unmold cleanly.
  10. Drizzle warmed honey over the top of each dome so it runs slowly down the ridged sides and pools at the base, then scatter crushed pistachios, place a glazed mandarin segment in the center, and finish with fresh mint sprigs.

Notes

Drain ricotta overnight through cheesecloth for the smoothest texture. Warm the honey slightly before drizzling so it flows evenly down the ridges. Unmold after exactly 3 to 4 minutes at room temperature for clean edges without cracking.
