Ingredients
  

  • 2.5 cups Sweetened shredded coconut Divided for mixture and rolling
  • 1 cup Graham cracker crumbs Finely crushed
  • 0.75 cup Sweetened condensed milk Binds everything together
  • 1 cup Mini chocolate chips Plus extra for topping
  • 1 teaspoon Vanilla extract Pure extract preferred
  • 1 cup Additional coconut For rolling coating
  • 0.25 cup Additional chocolate chips For decoration
  • 0.25 cup Graham cracker crumbs Optional for coating variation

Method
 

  1. Mix 2 cups coconut, graham crumbs, condensed milk, chocolate chips and vanilla until combined
  2. Mixture should hold together when squeezed, add more milk if too dry
  3. Scoop tablespoon portions and roll into one inch balls with damp hands
  4. Roll each ball in additional coconut to cover completely
  5. Press few mini chocolate chips into top of each ball
  6. Place finished balls on parchment lined baking sheet
  7. Refrigerate 30 minutes to firm up before serving
  8. Keep refrigerated in airtight container up to 2 weeks
  9. Serve chilled for best texture and flavor
  10. Share these treats with friends and family
