Turkish Bread

Soft and pillowy pan cooked flatbreads made with a simple yogurt and yeast dough. Brushed with garlic butter and parsley for a gorgeous finish.

Ingredients
  

  • 3 cups all purpose flour Plus extra for dusting
  • 1 tablespoon active dry yeast Ensure it is fresh
  • 1 cup warm milk About 110 degrees
  • 1 tablespoon granulated sugar To feed the yeast
  • 2 tablespoon olive oil For moisture
  • 2 tablespoon Greek yogurt Plain and unsweetened
  • 1 teaspoon salt Standard table salt
  • 3 tablespoon unsalted butter Melted for brushing
  • 1 tablespoon fresh parsley Finely chopped for garnish
  • ½ teaspoon crushed red pepper Optional for garnish

Equipment

  • 1 Large mixing bowl For rising the dough
  • 1 Cast iron skillet For cooking the bread evenly
  • 1 Rolling Pin For flattening the circles
  • 1 Pastry brush To apply the melted butter

Method
 

  1. Whisk the warm milk, yeast, and sugar in a large bowl until it becomes frothy.
  2. Stir in the olive oil and yogurt, then gradually add the flour and salt to form a dough.
  3. Knead the dough on a floured surface for five minutes until smooth and elastic.
  4. Place the dough in an oiled bowl, cover, and let it rise until doubled in size.
  5. Punch the dough down, divide it into six equal portions, and roll each into a tight ball.
  6. Flatten each ball with a rolling pin into a wide circle and let them rest for ten minutes.
  7. Cook each circle in a hot dry skillet for two minutes per side until puffed and golden.
  8. Brush the warm flatbreads with melted butter and sprinkle with chopped parsley before serving.

Notes

Make sure your skillet is fully preheated before adding the dough. This immediate blast of heat is what creates the beautiful puffy air pockets inside.
